I cut my avocado in half, pitted it, cracked an egg in the pit areas (got rid of some of the eggwhite so the egg would fit, can be used for something else like meringues later). Then I put some toppings. I used garlic powder, black pepper, and some swiss cheese. Then I tossed it in my preheated 425 degree oven for 15 minutes. Simple.
I'm very picky about my eggs and was doubtful I'd like them baked--but I did! The yolk was so soft and scrumptious. I also use low sodium soy sauce when I'm eating it. Soy sauce + Avocado = yum!
