- 6 eggs
- 1/4 cup of heavy cream
- 1/2 cup of any shredded cheese
- 1 cup chopped spinach
- 1/2 cup chopped bacon (6 or 7 pieces)
- Spices with amounts up to you: Salt, pepper, garlic powder
Cook the bacon in a pan. If using fresh spinach, cook it in the pan after you're finished with the bacon. Chop the spinach and bacon up when they're cool enough. Combine all the ingredients and put them in muffin tins. Cook at 375 for about 15 or 20 minutes (or until done). Be careful not to overfill the muffin tins like I did. :)
I guess this isn't a "real" frittata since it's just baked. Crustless quiche maybe? Eh. It's tasty. All that matters. Dysfunctional cooking.
